
Baked Shrimp with Garlic Lemon Butter Sauce
Love an easy dish that you can throw together in minutes? Us too. This recipe is proof that you don’t need to spend hours slaving over a hot stove to make a delicious meal. This recipe is almost so simple you don’t need a recipe for it, but we said “almost”. Make this recipe once or twice and it can easily become your go-to when you need to make dinner in a pinch. Serve it up with some fresh steamed vegetables and rice and you’ve got a perfect mid-week dinner.
Ingredients
- Extra large raw shrimp – large or jumbo size will work too just adjust the bake time slightly (give or take).
- Butter – salted or unsalted will work here.
- Garlic – use fresh garlic for best results.
- Lemon juice – don’t use the bottled stuff here only fresh.
- Salt and pepper
- Red pepper flakes – if you don’t like heat omit, if you love heat add extra.
- Fresh parsley – not only will this add color but a light herby flavor that pairs well with lemon.
Directions
- Preheat oven to 350 degrees. Place shrimp in a single layer in a 13 by 9-inch baking dish. (A baking sheet likely won’t have a tall enough rim to contain the marinade.)
- Melt unsalted butter in a small saucepan over low heat. Add garlic to the pan and saute for 30 seconds. Alternately melt butter with cloves garlic in a small microwave-safe bowl in microwave.
- Stir lemon juice into the butter mixture.
- Pour butter mixture over shrimp in baking dish, season with kosher salt and black pepper, and red pepper flakes, toss shrimp then spread into an even layer.
- Be careful with seafood leftovers—store them in an airtight container in the fridge and reheat carefully to a safe temperature.
