We are getting very serious about our Barbeque and the best way to lock in the flavor before you even fire up that grill or smoker is with a good seasoning rub. The flavors in the different rubs can really change the taste of your overall meal, so try them all and see which ones you love most.
The Classic
Ingredients:
- 1 ½ teaspoon celery seeds
- 1 ½ teaspoon cumin seeds
- 1 ½ teaspoon yellow mustard seeds
- 1 ½ teaspoon coriander seeds
- ¾ cup turbinado sugar
- ¾ cup dark brown sugar
- ½ cup paprika
- 3 tablespoons fine sea salt or kosher salt
- 4 teaspoons onion powder
- 4 teaspoons garlic powder
- 1 tablespoon chili powder
- 1 ½ teaspoons dried oregano
- 1 ½ teaspoon ground black pepper
Directions:
Place celery seeds, cumin seeds, mustard seeds, and coriander seeds in a spice grinder and grind until fine. Mix together with the remaining ingredients.
The Hot One
Ingredients:
- 1 tablespoon ground ancho or pasilla chile pepper
- 1 tablespoon paprika
- 1 ½ teaspoon packed brown sugar
- 1 ½ teaspoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon ground black pepper
- 1 teaspoon dried thyme
- ½ teaspoon salt
- ¼ teaspoon cayenne pepper
Directions:
- In a bowl, stir together all ingredients until evenly combined.
- Transfer to a tin or bowl; cover and store at room temperature for up to 1 month.
- To use, rub about 1 tablespoon rub over 1 pound meat or poultry. Grill, broil, or roast as desired.
The Smoke Rub
Ingredients:
- 1 tablespoon smoked paprika
- 1 tablespoon onion powder
- 1 ½ teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon dry mustard
- 1 teaspoon ground ginger
Directions:
In a small bowl combine all ingredients.
Memphis Rub
Ingredients:
- ¼ cup paprika
- 1 tablespoon ground cumin
- 1 tablespoon packed brown sugar
- 1 tablespoon chili powder
- 1 tablespoon ground black pepper
- 1 ½ teaspoons cayenne pepper
- ¼ teaspoon ground cloves
Directions:
- In a bowl, stir together all ingredients until evenly combined.
- Transfer to a tin or bowl; cover and store at room temperature for up to 1 month.
- To use, rub about 1 tablespoon rub over 1 pound meat or poultry. Grill, broil, or roast as desired.
