As Summer winds down we thought it only right to feature a recipe for Fresh Peach Dacquiris! These can be made as an alcohol free “Mocktail” by eliminating the rum or with golden or dark rum for those looking for something to put a little more gas in their tank!
Summer in the Carolina’s means that farmer’s Markets and roadside vegetable stands are overflowing with ripe delicious fresh Fresh Peaches!
Perfect Peach Daiquiri
Southerner’s enjoy most of them plain because they are just too good to consider cooking or baking with, I have set aside a few for my favorite summertime drink, the Peach Daiquiri. A lot of peach daiquiri recipes are overly fussy, involving simple syrup, lime juice, powdered sugar, and even daiquiri mix (oh no!) However, I do not think any of that is necessary, because when you start with peaches this good, the recipe is simple—just three ingredients!
The Perfect Fresh Peach Daiquiri Recipe
Makes One drink (multiple for the number you wish to make!):
1 magnificent tree-ripened peach, peeled, pitted and cut up
1 cup crushed ice
2 ounces golden or dark rum
The rest is pretty simple:
Place your ingredients in blender with tight-fitting lid and puree until smooth.
Pour into a tall glass and serve immediately. If desired, garnish with a peach slice and a mint sprig. Find deck with a rocking cxhair and a sunset view and sip slowly and enjoy.
With a truly ripe peach, the skin peels off easily using a paring knife. Otherwise, drop your peaches in some boiling water for about 45 seconds and then drop them in ice water for about 1 minute. Then the skin will come off easily.
White rum may be substituted for golden rum, however the flavor will not be as deep.
If you are using white rum, try adding a tablespoon of fresh lime juice for some extra flavor.
